Why does Anakin from The Clone Wars seem more mature than Anakin in Revenge of the Sith?
Well, the events of Revenge of the Sith take place over about 10 days.
In the first four days, we see that Anakin is gradually:
Sleep-deprived.
Under an extreme amount of stress (the Jedi, his family, are telling him to betray Palpatine, a father figure) and pressure.
Scared shitless (he had a nightmare about Padmé’s death, last time he had such a dream his Mom died).
So he’s not thinking clearly.
It doesn’t help that:
The Jedi Council makes it evident that they don’t trust him (because he’s a known hot-head who generally messes up the plan so that he can improvise, and he’s been given a delicate mission, which he’s normally unqualified for but is - in this case - the only person who can carry it out cuz he’s the Chancellor’s friend).
Padmé is saying that Palpatine is corrupting the Republic and now she seems to sympathize with the Separatists, the same Separatists who Anakin saw as the enemy for the past 3 years.
Obi-Wan, his other father figure, has been sent to Utapau - without Anakin to back him up - to capture or kill General Grievous, a known Jedi killer.
Similarly, Ahsoka is on Mandalore, also without Anakin to help her, fighting Maul, a Sith Lord.
The reality is that Palpatine put a series of events in motion that caused each of these points.
Sidious appoints Anakin as a Master, fully aware that the evermore-concerned Jedi Council would reject this promotion, which will irritate Anakin and drive a wedge between him and the Jedi, making Palpatine his only viable confidant.
Padmé is right on the money. Palpatine is corrupting the Republic, he is amassing power.
Sidious is the one who told Grievous to go to Utapau, then told Anakin (and, by extension, the Jedi) that that’s where he is, knowing they wouldn’t let Anakin go and would send Obi-Wan instead.
The only reason Anakin isn’t by Ahsoka’s side is because of Sidious’s staged kidnapping of the Chancellor.
